Unroasted buckwheat groats are a type of groat that has not undergone a roasting process. Unlike traditional buckwheat groats, which have a dark brown colour and distinctive taste, unroasted buckwheat groats retain the natural colour and taste of buckwheat grains.

Rinse the groats and pour water over them (2 cups of water per cup of groats). Place the pot on a low heat and cook the groats for about 10 to 15 minutes. It is best not to stir the semolina, as it will stick, but if the heat is low it should not burn. A teaspoon of oil may be added.
Remove the semolina from the heat, cover and place in a warm place to absorb the rest of the water and rest. If the groats have already absorbed all the water while cooking and are still completely hard, you can add a little more water. In this way, all the water in which the groats have been cooking stays inside and is not poured down the sink.
